Spices define a meal, without spices food would be bland and our taste buds would not be stimulated with exotic flavours. As the first country to produce and trade spices, India is renowned throughout the world for its distinguished flavours. At one point of time, Indian spices were even more valuable than gold or precious stones.

To gain a real appreciation of spices, one should try and understand a little bit about where they come from and what they offer. With over 50 out of the 80 grown spices in the world, Indian spices are derived from dried beans, fruits, tree trunks, branches, leaves, flowers and plants. Packed with essential minerals and vitamins, spices provide the human body with the needed calcium, iron, vitamin b, vitamin c and carotene as well as a wide range of antioxidants. Spices can be used whole, grounded, toasted, or dry or in a paste form, either at the beginning or end of cooking, though the usage and quantity depends on the region. To make a classic curry though, the following spices are used; coriander, turmeric, cumin, cinnamon and garlic.

Spices have been around for as long as civilians can recall and were even mentioned as far back as the Old Testament. According to the spices board in India, India now produces around 2.75 million tons of different spices valued at $US 4.2 billion. At present, black pepper, cardamom, cinnamon, turmeric and hot spices and grains such as coriander and cumin are the most imported spices. In terms of health benefits, spices are seen as special ingredients that can heal and rejuvenate the body. In Ayurveda, spices are used not only as a preventative but also to cure certain diseases. For example, pepper can help cure digestive disorders, whilst turmeric paste can be used for burns, itching skin and ginger can used to treat liver pain, anemia and rheumatism.
